Homemade Cinnamon Rolls Recipe
Cook Time: 15 minutes
Preparation Time: 1 hour (dough preparation) + 2 hours 45 minutes (proofing)

Ingredient List
For the Dough:
1 cup buttermilk, at room temperature
2 1/2 teaspoons yeast
2 large eggs, at room temperature
1/3 cup butter, softened
4 1/2 cups all-purpose flour
1 teaspoon salt
1/2 cup sugar
For the Filling:
1/2 cup butter, softened
1 cup brown sugar
2 tablespoons cinnamon
1/2 cup full-fat milk (for pouring over the risen rolls)
For the Frosting:
6 ounces cream cheese
1/3 cup butter, softened
2 cups powdered sugar
1/2 tablespoon vanilla extract
Optional Toppings:
Caramel, pecans, or walnuts
Instructions To Make Cinnamon Rolls From Scratch
Step 1: Prepare the Dough
Combine all of the dough ingredients except the butter until a dough ball forms.
Transfer the dough to a floured surface with 1 tablespoon of flour and add the softened butter.
Knead by hand for about 10 minutes (or use a mixer with a dough hook attachment) until the dough is smooth. It should spring back when gently pressed. If the dough sticks, continue kneading until it comes together a bit more.
Cover the dough. Let it rest for 2 hours or until it doubles in size, depending on room temperature.
While waiting for the dough to rise, proceed to make the filling.
Step 2: Make The Filling
Add all the filling ingredients except the milk to a bowl and combine. The milk will be used later in the recipe.
Step 3: Shape and Fill the Rolls
After the dough has risen, transfer it to a floured surface and roll it into an 18″×20″ rectangle.
Spread the filling evenly over the rectangle, then roll it into a log starting from the long side.
Divide the log into 10-12 equal rolls.
Step 4: Preheat The Oven and Allow Rolls To Rise Again
Preheat the oven to 400°F.
Place the rolls in a baking pan greased with butter. Leave a little space between the rolls so they have some room to expand.
Cover the pan with plastic wrap and allow the rolls to rise again. This will take about 45 minutes, or until the dough bounces back slightly when gently pressed.
Step 5: Bake
After the rolls are done rising, pour the 1/2 cup of reserved milk (from the filling ingredients list) over the top of each roll.
Place the pan in the preheated oven. Bake for about 15 minutes or until the rolls are golden brown.
Step 6: Prepare the Frosting
While the rolls are baking, make the frosting. Add the cream cheese and butter to a large mixing bowl and combine. Slowly add in the powdered sugar, combining well after each addition. Mix in the vanilla.
Step 6: Finish and Serve
After the rolls are baked, cover them with a kitchen cloth for about 10 minutes.
Frost the warm rolls with the prepared frosting. If desired, add caramel, pecans, or walnuts.
