  • 2 tablespoons olive oil

  • 2 large cloves garlic, coarsely chopped

  • 1 cup coarsely chopped yellow onion

  • 2 stalks celery, coarsely chopped

  • 4 cups vegetable stock

  • 1 cup unsweetened soy milk, or oat milk, more if desired

  2. Heat the olive oil in a large stockpot over medium heat. Add the garlic, onion, and celery. Stir often, until soft and fragrant, about 5 minutes.
